This Japanese Santoku knife features a hard carbide steel core for excellent cutting edge retention and sharpness. Santoku means "Three Virtues," meaning meat, fish, and vegetables. The flat cutting edge lends itself to a sharp cutting motion rather than the oscillating motion of European chef's knives. The blade core is wrapped in 48 outer layers of steel, forming the blade's unique Damascus design. The cutting edge is symmetrically sharpened using the Honbazuke process (not single bevel), making it suitable for both left- and right-handed users. There is no finger guard, allowing the full length of the cutting edge to be used. The handle and half-bolt seamlessly join for comfortable use. The smooth surface helps prevent calluses on the thumb and index finger. Hand wash and stone sharpen. We recommend using a wooden cutting board rather than glass, ceramic or stone, as these make the blade edge dull.
