Product description

Santoku knife with steel blade, 18 cm. Article by Miyabi.

The 5000FC-D knife series features everything that distinguishes Japanese knives: a Damascus pattern, an elegant handle, and excellent sharpness. Ideal for all Japanese knife enthusiasts and those who aspire to become one.

This Japanese Santoku knife features a hard carbide steel core for excellent cutting edge retention and sharpness. Santoku means "Three Virtues," meaning meat, fish, and vegetables. The flat cutting edge lends itself to a sharp cutting motion rather than the oscillating motion of European chef's knives. The blade core is wrapped in 48 outer layers of steel, forming the blade's unique Damascus design. The cutting edge is symmetrically sharpened using the Honbazuke process (not single bevel), making it suitable for both left- and right-handed users. There is no finger guard, allowing the full length of the cutting edge to be used. The handle and half-bolt seamlessly join for comfortable use. The smooth surface helps prevent calluses on the thumb and index finger. Hand wash and stone sharpen. We recommend using a wooden cutting board rather than glass, ceramic or stone, as these make the blade edge dull.

Features:

  • Ice-hardened blade. Thanks to the special ice hardening, the blade is particularly sharp and corrosion-resistant.
  • Ergonomic handle. The pakkawood handle sits comfortably in the hand and ensures optimal balance.
  • Hardened steel. The FC61 steel with a hardness of 60-62 HRC ensures long-lasting sharpness.
  • Honbazuke trigger. Sharpened and polished with the utmost care and craftsmanship in Seki, Japan, to ensure maximum precision.
